Curry F(l)avor Romanesco

Serves 4-6

Ingredients     rsz romanesco vaeira copy

  • 1 head Romanesco
  • 1 Tbsp. vegetable oil
  • 2 Tbsp. coconut oil
  • 1 tsp. curry powder
  • 1 Tbsp. fresh lemon juice
  • salt and pepper to taste


Preheat oven to 375º.

  1. Trim the Romanesco and slice off about 1/8 “ of the stem so it will stand upright.
  2. Set in a roasting pan or ovenproof skillet or dish.
  3. Drizzle vegetable oil over the Romanesco and salt.
  4. Roast betwenn 25-45 min. until a knife can easily be inserted into the center.
  5. Heat the coconut oil in a small saucepan and whisk in curry powder and lemon juice.
  6. Serve the Romanesco cut into wedges. Drizzle with the curry sauce.
  7. Season with salt and pepper.

Alternative toppings for roasted Romanesco: Salsa verde, chimichurri, carmelized onions and garlic.
